Founded in 1978 by visionary Takashi Uno, Shirube epitomizes the modern izakaya, transforming the traditional Japanese tavern into a vibrant, culturally rich experience. Situated in Tokyo's lively Kyodo district, Shirube quickly became a cherished social hub, renowned for its exquisite ambiance and a menu that artfully blends Japanese culinary traditions with innovative international influences.
From its humble beginnings, Shirube has achieved significant milestones. Under Takashi's pioneering leadership, the brand expanded across Tokyo with beloved establishments like Kuimonoya Raku in Roppongi and Harajuku, and Bistro 35 Steps in Shibuya. In recent years, the Uno family introduced ventures like Bistro Shirube West, Inokashira Shirube, and Izakaya CinCin, cementing the brand's legacy within Japan's dynamic dining scene.
In 2023, Takashi's sons, Yudai and Kodai Uno, expanded the cherished family tradition internationally to Santa Monica, inviting a global audience to experience the warmth and vibrancy of a true Japanese izakaya. What is an Izakaya?

HISTORY
1978-1997
Founded in 1978 by Takashi Uno, Shirube quickly became a renowned izakaya in Kyodo, Tokyo. Under Takashi's visionary leadership, it transformed into a trendy destination known for its vibrant atmosphere and delectable offerings. Notable milestones include the opening of Kuimonoya Raku in Roppongi (1985) and Harajuku (1986), expanding its influence in Shibuya with Kuimonoya Raku in Dogenzaka (1989).
1995-2009
In the following years, Shirube continued to captivate patrons, introducing Bistro 35 Steps in Shibuya (1995) and expanding its culinary excellence with Inokashira Shirube in Kichijoji (1997) and Bistro Shirube West in Hachioji (1997). The commitment to innovation led to the establishment of "Makanai-ya Shirube" in Shibuya (2001) and further diversification with Izakaya CinCin in Kagurazaka (2008) and Yebisu-do in Ebisu (2009).
2010-2016
In 2010, Shirube underwent significant transformations, with “Kuimono-ya Raku in Shibuya Dogenzaka" rebranding as “Tokyo Wine Club Raku." They continued to expand with Tokyo Wine Shokudo in Roppongi (2010) and Rakuchin in Shibuya Shinsen (2012). Despite changes, Shirube's commitment to excellence remained unwavering, moving Chopstick Cafe Shirube in Shibuya (2015) and emerging with 2918 in Kichijoji (2016).
2023-
Currently, the legacy of Shirube is entrusted to Takashi's sons, Yudai and Kodai Uno, who carry on the family's tradition of culinary brilliance. Building upon the esteemed reputation of Shirube, the Uno brothers expanded the brand to Santa Monica, opening a brand new location. This new chapter in Shirube's history continues to bring the essence of Japanese izakaya to a wider audience.
